Texit and Tea with Sarabeth - Two Texans casually discuss breaking from the Union

This impromptu kitchen discussion between two Texans about Texas breaking from the Union, includes an award-winning turkey chili recipe and a bumpy recitation of the Declaration of Independence. Enjoy. And let freedom ring.

My super healthy turkey chili that won me 2nd place in a Texas Chili Cookoff:

Ingredients:
- 16-20 oz. lean ground turkey
- salt to taste
- 1/2 an onion, chopped
- 4 cloves of garlic, chopped
- 10 oz. can of Rotel (unless you can find something non-GMO)
- 8 oz. can of tomato sauce
- 3/4 cup of water
- cumin to taste (1/2 - 1 teaspoon)
- 1/2-1 teaspoon of chili powder (you can always add more)
- 1/2- 1 teaspoon of paprika
- 1 bay leaf
- 1 medium sweet potato, peeled and diced into 1/2 inch cubes

Directions: (FYI - I always double the recipe)
In large skillet, brown the turkey over medium-high heat, breaking it up into small pieces and season with salt and cumin. When the meat is browned and cooked through, add onion and garlic and cook another 3 minutes, stirring. Add the Rotel, sweet potatoes, tomato sauce, water, cumin, chili powder, paprika, salt and bay leaf. You can add pepper too.

Cover and simmer over low heat until potatoes are soft and cooked through, about 30 minutes, stirring occasionally. Add more water if necessary. Remove bay leaf and serve.

Sometimes I serve with rice or tortilla chips and cheese.
Hot sauce can take it a whole new level as well.
