পোলাও এর চাল ধুয়ে পানি ঝরিয়ে নিতে হয়। হাড়িতে তেল গরম করে পেয়াজ কুচি ভেজে বেরেস্তা করে তুলে রেখে ওই তেলে এলাচ দারুচিনি তেজপাতা পেয়াজবাটা দিয়া কয়েক মিনিট পর আদা, রসুন, ধনে ও মরিচ গুঁড়া, অল্পো পরিমান হলুদ গুঁড়া দিয়ে লবণ দিয়ে এরপর মোরগের কাটা পিস জায়ফল ও জয়ত্রী বাটা দিয়ে ঢেকে দিয়ে ভালোমতো কষাতে হবে। সকল উপকরণ দেয়ার পর পোলাও আর সাথে মাংস রান্না একসাথে মিশিয়ে ১০ মিনিট অল্প আচ এ রাখার পরে উঠিয়া ফেলুন। হয়ে গেলো আপনার মোরগ পোলাও।
