Make Authentic New York Bagels at Home
What is the secret of the New York bagel? Is it the water? (Spoiler alert: No!). You can make authentic New York bagels at home by using malted barley syrup instead of sugar and boiling them before baking. Here's everything you need to know to make New York bagels in your own kitchen.

Here is the recipe:
Ingredients
16 oz (454 g) bread flour
9 ounces (250 g) water
2 tsp (6 g) yeast
1 Tbls (21 g) malted barley syrup
1 1/2 tsp (6 g) salt
Add water, yeast and malted barley syrup in a bowl
Add flour and salt
Mix and knead dough for 10 minutes, either by hand or stand mixer
After kneading, form dough into a ball, place in lightly oil bowl, cover with a towel or plastic wrap and let it rise on counter for two hours.
When dough has risen, place it on counter and form into a rectangle. Cut dough into six strips.
Take each strip and roll into a rope about 8 inches long.
After rolling the dough, place your hands on each end and twist each end in a different direction.
Then loop the dough rope around your four fingers with the ends coming together in the palm of your hand. Now, place your hand on the counter and roll the ends of the dough back and forth to seal the ends together.
Place the shaped bagel on a sheet pan. Repeat for the remaining bagels.
Cover the bagels with plastic and place in the refrigerator overnight.
Two hours before you make your bagels, take them out of the refrigerator and let them come up to room temperature.
When ready to bake, preheat your oven to 500 degrees and bring a large pan of water to boil.
After the water boils, place bagels into the water. Do not crowd the bagels. You might have to cook just a couple at a time. Boil each side for 30 to 60 seconds. When done, place on a rack to let bagels drain.
If you are going to add toppings to your bagels, like sesame seeds or everything bagel seasoning, add them when you remove the bagels from the boiling water.
When all of your bagels have been boiled, place them in a pan and bake in a 500-degree oven for 10 to 12 minutes.
When done, let bagels cool. Enjoy with butter and cream cheese or make a sandwich with the bagels. Fresh bagels do not need to be toasted.
