Ingredients:
1 pound ground chicken
½ cup almond flour
½ cup grated parmesan cheese
½ cup shredded Cheddar cheese
2 cloves garlic, minced
1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper
2 large eggs
2 tablespoons of olive oil, for frying.

Instructions:
1. In a large mixing bowl, combine the ground chicken, almond flour, Parmesan cheese, Cheddar cheese, garlic, oregano, salt and black pepper, mix well.
2. Add the eggs to the mixture and stir until well combined.
3. Heat the Olive oil in a large skillet over medium high heat.
4. Using a cookie scoop or spoon, form the chicken mixture into small fritters and place them in the skillet.
5. Cook the fritters for about 4-5 minutes on each side or Until golden brown.
6. Remove the fritters from the skillet and place them on a pepper towel-lined plate to drain any excess oil.
7. Serve the keto cheesy fritters as a snack or appetizer. They're sure to be a crowd pleaser, and they are also keto friendly!
