Shahi Paneer - A no onion garlic recipe - Perfect with luchi or Pulao

Ingredients:
- 200gms Paneer
- 25gms Cashews
- 10gm Melon Seeds
- 10gm Poppy Seeds
- 4 cloves
- 5 green cardamom
- 1 inch ginger
- 1 Tsp turmeric powder
- 1/2 tbsp red chilli powder
- 1 tbsp coriander powder
- 1/2 tbsp cumin powder
- Salt
- 1 tbsp sugar
- 1/3 tbsp kasuri methi(optional)
- 1 tbsp ghee
- 30 gm butter

Preparation:
- Cut the paneer in diamond shapes
- Heat oil in a kadhai
- Fry the paneer till it’s golden brown
- Keep itn soaked in water

- Soak Cashews, melon seeds and poppy seeds for 30 minutes (use 1/3rd cup water)
- Make a fine paste

- Light crush the cloves, green cardamom and Cinnamon

- Mix the powdered spices, salt and sugar with 1/4th cup water

Cooking:
- Heat ghee in a kadhai
- Add the cashew paste
- Fry on a low flame for 5 minutes
- Add crushed garam masala, bay leaf and sliced ginger
- Fry for 2 more minutes and add milk
- Bring to a boil then simmer for 5 minutes

- For a smooth gravy strain the gravy once
- Heat butter and add the spice mix
- When oil starts to separate add the strained mixture back
- Bring to a boil and add the paneer
- Adjust salt and sugar as per taste
- Over a medium flame cook for 10 minutes
- Toast the kasuri methi and lightly crush in your hands
- Turn off the gas and add the kasuri methi

Serve with gorom gorom luchi
