Need for Speed™ Hot Pursuit

Probably the last decent NFS game.

Music is the catchy tune from the intro of NFS Hot Pursuit 2:
"Goin' Down On It" by Hot Action Cop. It really grows on you the more you listen to it in that game.
This was back before EA went to shit and Need for Speed was consistently good every game.
