In this video, I'll show you how to make Midwest Chili, which is different from the Texas-style chili, with various ingredients that add flavor to the dish. I use chuck steaks, smokes them then add them to a pot with broth and chili paste, and adds beans, tomatoes, and even pineapple to create a unique blend of flavors. The chili is prepared by cooking the smoked beef with onions and garlic, then adding the other ingredients like diced tomatoes, jalapenos, green bell pepper, beef stock with chilies, and red beans. I cooked it down for about 2 hours. Then I adjust seasoning with cumin, MSG, cinnamon, and ground mustard, and lets it cook for another 45 minutes to let the flavors meld together. Ingredients:
1 1/2 large onions
1/2 pinapple,
2 jalapenos
4 cloves of garlic
5 pounds of chuck steak
4 cans of diced tomatoes with green chilies
4 cans of red beans
Kosher Salt to taste
Black Pepper to taste
adjusted seasoning to taste:
cumin, MSG, cinnamon, and ground mustard

Chili Broth Ingredients:
1/2 large onion, diced
4 garlic cloves, minced
2 tbsp dried oregano
2 tbsp dried thyme
4 dried ancho chilies, seeded and soaked in hot water for 15 minutes
4 dried guajillo chilies, seeded and soaked in hot water for 15 minutes
2 tsp cumin
1 tbsp salt
7 cups beef broth
2 tbsp apple cider vinegar
4 oz pineapple juce
