Ingredients:

1 cup fine semolina (suji)
1/2 teaspoon salt
1/2 teaspoon red chili powder
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
Water as needed
Oil for frying
Instructions:

In a mixing bowl, combine the semolina, salt, red chili powder, cumin powder, and coriander powder.
Add enough water to the mixture to form a smooth dough. Knead the dough for 5-7 minutes.
Divide the dough into small portions and roll each portion into a thin circle on a flat surface.
Place the rolled-out circles in the sun for 1-2 hours until they are completely dry. Alternatively, you can bake them in a preheated oven at 180°C for 10-15 minutes until crispy.
Once the papads are dry and crispy, heat oil in a pan over medium heat. Fry the papads in hot oil until they turn golden brown and crispy.
Drain the papads on a paper towel to remove excess oil.
Serve the suji ka papad with chutney or pickle, or enjoy them as a standalone snack.
Note: Store the suji ka papad in an airtight container once they are completely cool.
