Arabic Falafel food

These are one of the best recipe out there. These falafel are crispy from outside and soft from inside. The inside is not mushy and cooked perfectly. Enjoy them with pita bread and sliced of tomato, onion, chopped parsley and tahini sauce.

Ingredients :

3 cups soaked overnight chickpeas
1/2 cup chopped parsley
1/2 cup chopped cilantro
1 small onion chopped
2-3 garlic cloves

-Put all the ingredients above in the food processor. Process until very small grains consistency. The mixture shouldn't be smooth. Don't forget to scrape the side once or twice.
-Keep the mixture aside for about 30 minutes or 1 hour.

Then add the following :

1- 1 1/2 tsp cumin powder
1- 1 1/2 tsp coriander powder
1/2 tsp black pepper
1/4 tsp hot red pepper
1/2- 1 tsp salt or to taste
1/2 tsp baking soda
1/4 tsp baking powder
2-3 Tbsp. chickpeas flour
1-2 Tbsp. sesame seeds ( I added roasted one)

Mix all the ingredients above with chickpeas mixture and set aside until the oil is heated.

How to form and fry falafel :

Either you use the falafel tool to form round shapes or just form them with your hands like round and thick patties.
Fry in hot and deep oil which is heated over medium heat.
Fry until brown. Flip and mix time to time.

For the simple tahini sauce:

1/2 cup yogurt
1 Tbsp tahini
1 small garlic clove grated
pinch of salt
1-2 Tbsp lemon juice

Mix all the ingredients until it resembles a smooth thin sauce. You may need to add lemon juice or water to smooth the sauce into the desired consistency.

Put falafel in pita bread with slice of tomato, onion, cucumber pickle and chopped parsley then drizzle with tahini sauce.
