S04E08 Becker's Easy Eats: Easy Fig Cookies

Something sweet this time! Imagine crumbly, flaky cookie crust with a filling of sweet, sticky, jammy fig. Awesome and almost exotic! They are not difficult to make and you can do them in a variety of shapes. I made mine into mini pie and ball shapes - both super delicious!

EASY FIG COOKIES

Ingredients:

Cookie Crust
226g butter
226g cream cheese
250g all-purpose flour

Cookie Filling
200g dried figs
¼ cup hot water
1 tbsp lemon juice
90g roasted cashew nuts
1 tso cinnamon powder
2 tbsp apricot preserve
2 tbsp orange preserve
90g granulated sugar
