Here's a recipe for delicious and healthy strawberry oats pancakes:

Ingredients:

1 cup rolled oats
1/2 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1 cup milk (dairy or non-dairy)
1 large egg
2 tablespoons honey
1 teaspoon vanilla extract
1/2 cup finely chopped fresh strawberries
Cooking spray or butter for greasing the pan
Instructions:

In a blender or food processor, blend the rolled oats until they become a fine powder.
In a large mixing bowl, whisk together the oat flour, all-purpose flour, baking powder, salt, and cinnamon.
In another mixing bowl, beat the egg, then add in the milk, honey, and vanilla extract, whisking until well combined.
Add the wet mixture to the dry mixture and mix until just combined.
Stir in the chopped strawberries.
Heat a non-stick pan or griddle over medium heat.
Once the pan is hot, spray with cooking spray or melt some butter to coat the surface.
Using a 1/4 cup measuring cup, pour the pancake batter onto the pan.
Cook until bubbles form on the surface of the pancake and the edges start to set, then flip and cook for another minute or so until both sides are golden brown.
Repeat with the remaining batter, adding more cooking spray or butter to the pan as needed.
Serve the pancakes hot with additional sliced strawberries and honey, if desired.
