delicious lentil walnut tacos | easy vegan eats
I love making this super easy lentil-walnut taco meat. It is extremely customizable, and perfect for feeding a crowd of hungry people. It's great for meal prepping too!
LENTIL WALNUT TACO MEAT:
Ingredients:
-1 cup lentils
-1/2 cup chopped walnuts
-1 large onion (sub onion seasoning to taste if desired)
-1 can diced tomatoes
-Several cups of water
-Taco seasoning (see recipe link below)
Directions:
-Soak lentils and walnuts in warm water at least 30 minutes prior to cooking. Lentils and walnuts should be completely submerged.
-In Dutch oven or pot of choice, warm a few tablespoons of veggie or olive oil. If you are using an onion, chop and add to pot, sautéing until tender.
-Drain walnuts and transfer to cutting board. Chop up a bit finer, then transfer to pot. Stir in taco seasoning, and onion powder if you are not using an onion, and sauté until "toasted".
-Pour lentils into pot. You do not have to drain them first.
-Add can of diced tomatoes and enough water that the ingredients in the pot are mostly covered. I never measure this step, so follow your instincts. It's okay if you have to add a bit more water later on.
-Bring pot to boil, then reduce to simmer and cover for around 35-40 minutes, or until the lentils are nice and tender and the liquid has been absorbed or mostly cooked off.
-Let cool slightly and serve or store in containers for future meals.
