Ingredients:

1 cup basmati rice
2 cups water
1/2 cup fresh curry leaves, washed and dried
1/4 cup grated coconut
2 green chilies, chopped
1 tsp mustard seeds
1 tsp urad dal
1 tsp chana dal
1/4 tsp asafoetida
1 tbsp oil
Salt, to taste
Instructions:

Rinse the rice with water until the water runs clear. Soak the rice in water for 30 minutes and drain.

In a pan, roast the curry leaves until crispy. Set aside.

In the same pan, add the grated coconut and roast until lightly browned. Set aside.

In a separate pan, heat oil over medium heat. Add mustard seeds and let them splutter.

Add the urad dal, chana dal, and asafoetida. Fry until the dals turn golden brown.

Add the soaked rice and fry for 2-3 minutes until the rice turns opaque.

Add the water and salt. Bring to a boil.

Reduce the heat to low, cover the pan and cook for 15-20 minutes until the rice is cooked.
