Randi’s HEARTY CABBAGE SOUP
2 Onions, chopped
3 cloves Garlic, minced
6-8 or more Carrots, chopped
4 + Celery stalks, chopped
4-6 fresh Plum Tomatoes, chopped or can of diced tomatoes (optional)
7 Potatoes (or more), cubed (I use Yukon golds)
1 head (approximately) Cabbage, roughly chopped

Dried Basil, Oregano or Thyme, if desired
Smoked Paprika and Cayenne Pepper, if desired
½ c. fresh Parsley, chopped (or 1 T. dried, if desired)

6 cups (more or less) Filtered Water (can use vegetable or chicken broth)
Parmigiano-Reggiano or Pecorino Romano Cheese, grated (optional)
Feta Cheese crumbles (optional)
Avocado, Coconut or Oliver Oil for sautéing the veggies (or combo)
Salt & Pepper to taste

Add generous amount of oil to a stock pot. Sauté the onions for 5 minutes or so. Half-way through, add the minced garlic so the garlic doesn’t burn. Then add the chopped carrots and celery. Stir and sauté for another 5 or so minutes. Add cubed potatoes, salt and pepper. Stir. If using basil, parsley or other spice like thyme, add now. If sticking, add either more oil or water/broth.

Add chopped cabbage. Mix well. Add water of broth. Stir well. Cover and simmer after boil for about 20 minutes, until potatoes are fully cooked.

Can add beans of your choosing (great northern, cannellini would work well).
Can serve with quinoa, brown rice, chickpea or red lentil pasta.
