The Recipe:
1.Start by washing and drying 1 large zucchini. Cut in half or quarters and add to your airfryer/pan/baking dish.
2. Add 4ish large garlic cloves to the dish. Season with salt and pepper and drizzle with about 1-2 tablespoon olive oil.
3. Airfry or bake for about 20-25 minutes. Time varies by oven and your airfryer. If you cut them smaller, it’ll cook up faster.
4. Remove and let it COOL COMPLETELY before you move on. Once cooled, chop up the zuchini and garlic fine.
5. Grab a bowl, add 12 to 16oz of a thick Greek yogurt. Add chopped garlic and zucchini to the yogurt.
6. Season with salt& pepper and give it a taste. Plate it up and top with olive oil, fresh herbs (mint would go great), some toasted walnuts, and aleppo pepper.
