Here is delicious recipe for Crawfish Bisque

1 pound of crayfish tails, peeled
4 tablespoons of unsalted butter
1 onion, chopped
2 celery stalks, chopped
2 garlic cloves, minced
1/4 cup of all-purpose flour
4 cups of fish or chicken stock
1/2 cup of heavy cream
1 tablespoon of tomato paste
1 bay leaf
Salt and black pepper, to taste
Cayenne pepper, to taste
1/4 cup of dry sherry
Fresh parsley, chopped, for garnish
