This year, I decided to try something I'd never seen before or even considered for a briny, salty, corned beef: a fruit sauce. I've paired fruity sauces with other cuts of meat, but never a corned beef. The result was nothing short of AMAZING! If you're looking to branch out a bit from the traditional corned beef and cabbage recipes, give this one a whirl! Here's what you'll need:

Ingredients:
1, 4-5 lb corned beef brisket
Water
2 TBL olive oil
1 large onion, peeled and quartered
4 bay leaves
4 cloves minced garlic
1 TBL whole peppercorns
1/2 tsp ground cloves or 8 whole cloves
1 tsp thyme

Blackberry Sauce:
1/2 cup blackberry jam
1/2 cup frozen blackberries
2 TBL honey dijon mustard
2 TBL brown sugar
1 TBL soy sauce (light)
1/2 tsp black pepper
