Italian Wedding Soup
Sidenote: Don’t make the mistake that I made with overdoing it with onions
Recipe: 1 small grated onion
0.38 large egg
1 cup of fresh Spinach, chopped Parsley, 1
Tsp of minced garlic,
Tsp of salt
Tsp of pepper,
4 ounces oz lean ground pork + lean ground beef.
* I had no ground beef so I used lean ground pork
4 cups of low sodium chicken broth
.19 lb orzo pasta
To make meatballs: Stir parsley, egg, breadcrumbs, Parmesan cheese, minced garlic, salt, pepper, and ground beef together. Shape the meat mixture into meatballs and place on a plate.
For broth: Open one container of 32. Oz low sodium chicken broth
(which equals to 4 cups of broth) into a large pot and boil. Then turn it down to medium heat and add fresh chopped spinach to it followed by (uncooked) meatballs to the pot and simmer for a few minutes, stirring to make sure they don’t stick. Let it cook for an hour or more. * If you like add some orzo to liquid and cook on low heat.
