Today we're making an Italian Lemon Cake!

Ingredients:

Cottage cheese or ricotta: 150 grams
Caster sugar: 150 grams
Flour: 250 grams
Lemon: 1 for zesting and the juice
Eggs: 4
Olive oil: 50 ml
Milk: 100 ml
Baking powder: 3 teaspoons
Almond or vanilla extract: 1 teaspoon

Oven temperature and baking time: 180 degrees celcius for 50 minutes
Switch the oven off and let the cake sit for another 10 minutes before removing from the oven. This prevents the cake from collapsing
