How To Cook Bolognaise Like An Italian

Recipe:

-Dice 1 large Carrot, 1 Onion & 2 Celery.

-Sweat off the vegetables in pot with oil, salt & pepper.

- Add diced garlic, fresh thyme leaves & 1/2 tbs Sugar.

- To the side, Fry off 1kg of beef mince.

- add 150-200ml red wine & reduce down 90%.

- add 200g tomato Puree & cook off for 1 minute before adding the Beef & Stirring.

- Add 2 tins of Chopped Italian Tomatoes, 3 tins full of water, cover with lid & simmer on medium heat for 1 hour, stirring occasionally.

- Adjust seasoning & add some chilli powder if you like.
