▶️Ingredients (measured with rice spoon)
3~4 eggplant, 250g pork, 1 green onion, 2 cups rice, 2 cups water.
▶️ Recipe (Baekson's recipe)
1. Wash 2 cups of rice, soak for 1 hour, drain the water in a strainer
2. Cut eggplant diagonally thickly
3. Add finely chopped green onion to cooking oil in a frying pan over medium-low heat and season with green onion oil.
4. (Raise medium heat when the edges are browned) Add 1 pork rice wine and stir-fry.
5. Add eggplant and stir-fry until it suffocates (heat high) and add 2 soy sauce to the edge of the pan to taste (turn off the heat when the moisture is almost gone)
6. Put the soaked rice, roasted eggplant, and water in a pot and bring to a boil over medium-high heat.
7. Reduce the heat for 10 minutes, moxibustion for 10 minutes
8. Serve with seasoning
