corned beef (3 pounds)
1 brown onion
8 cloves
2 bay leaves
8 black peppercorns
1 carrot (coarsely chopped)
2 tablespoons brown sugar (or any other sugar)
2 tablespoons malt vinegar (or any other vinegar)
a good dash of basil
water
