INGREDIENTS ( serves 4 ) :
1 chicken breast ( 1 to 2 servings )
160 grams chopped sourdough bread 9 ( 5.64 oz )
250 grams chopped romaine lettuce ( 8.81 oz )
30 grams minced anchovies ( 1.05 oz )
130 grams grated parmesan ( 4.58 oz )
3 minced garlic cloves
2 egg yolks
25 grams mustard ( 0.88 oz )
20 grams red wine vinegar ( 0.70 oz )
5 grams Worcestershire sauce ( 0.17 oz )
35 grams lemon juice ( 1.23 0z )
30 ml spring water ( 1 fl oz )
1/4 + 1/4 teaspoon salt ( 0.57 + 0.57 grams )
1/4 + 1/4 teaspoon ground black pepper ( 0.58 + 0.58 grams )
100 + 30 ml olive oil ( 3.4 + 1 fl oz )
INSTRUCTIONS :
.season 1 chicken breast with salt & ground black pepper on both sides
.place in preheated oven 200 c / 392 f for 20 minutes
.meanwhile in a bowl add 2 egg yolks, 25 grams mustard
.add 5 grams Worcestershire sauce, 20 grams red wine vinegar & mix well
.add 100 ml olive oil while mixing
.add 3 minced garlic cloves, 30 grams minced anchovies
.add 35 grams lemon juice & mix well
.add 30 ml spring water & mix well
.add 30 grams grated parmesan & mix well
.remove chicken from oven & drizzle some dressing on both side
.place back in oven for 5 to 10 minutes
.in a frying pan on medium heat add 30 ml olive oil
.once heated add 160 grams chopped sourdough bread
.add 1/4 teaspoon salt, 1/4 teaspoon ground black pepper
.mix well & cook until golden brown ( 3 to 5 minutes )
.sprinkle some grated parmesan, mix well & cook for 1 minutes
.in a large mixing bowl add 250 grams chopped romaine lettuce, 8 to 10 spoonfuls of dressing
.work dressing into lettuce
.add some parmesan, croutons and work into salad
.remove chicken, cut into slices
.place salad in bowl & add chicken
.sprinkle parmesan & drizzle dressing
.cover & store leftover dressing for up to 3 days
