Hunting Season ~ Putting Meat On The Off Grid Homestead Table

I got a deer! I will be putting meat on the table this year. I am hunting very hard this year. I want to get my limit of deer and put the meat away to last me through the entire year.

This is about a year old deer I think because it is a bit smaller. I have doe permits as well as a normal rifle license. The deer out here are over populated so you literally see a dead deer on the side of the road every day.

Either a hunter gets the deer or the gov kills them in order to control the population and save the lives of people.

I prefer to put meat on my table. Meat here is about $5 per pound and that is not organic. Deer meat is organic and worth way more.

A doe permit costs $5. That is insanely cheap for the amount of meat you get from a deer.

I hung the deer on a tree and gutted it. Then skinned it. I want to keep and preserve the skin and make leather with it.

I will process this entire deer myself. I plan to make jerky out of it. I will make different batches with different herbs and spices and see what turns out the best.

Some will be normal jerky while others will be fully dried to a crisp and vacuum sealed for long term storage.

I plan to have meat on the table for the entire year for Melanie and myself.

I later took the deer inside on the table in the tiny house on wheels to process the meat. I worked on the table with a movie going to make the work go better.

But it took me a couple hours just to process the two rear legs of the deer into jerky meat. You have to carve the meat from the bones an then strip out all fat to make jerky. Then cut it into thin strips. This takes a long time and a lot of work.

I got about 20 pounds of meat in two tupperware containers already though.

I put the rest of the deer out in the cold overnight to be finished later.

I put the finished meat in the freezer. Yes I have a freezer. That is another video, coming soon....
