Making Venison Jerky At The Off Grid Homestead

This is the second part of the video from yesterday. I spent the entire day smoking venison to make jerky. It is an all day project and takes a lot of time but it is so good when its done.

I have this large Brinkmann smoker I got at Tractor Supply last year on clearance. It was dirt cheap because it had been damaged and was a floor model. They had tried to get rid of it for months and finally I made an offer and they sold it to me.

I sadly did not get a deer last fall but this year I got my deer and am making venison jerky with my new smoker.

This is a very easy smoker to use I have realized. It is hard to mess up with this thing.

On the other hand, I also made a batch of jerky on my propane grill and sadly some of it burnt. The grill does not turn down to a low enough heat and it was very hard to maintain properly. Especially as the day drew to a close and the outside temperature was dropping.

The smoker is very simple. Load it up with charcoal, put lighter fluid on it and light it. I let it burn off for a while until there is no more smell of lighter fluid before I put the meat on.

I had previously had the meat dripping on trays to get the excess moisture out before putting it in the smoker. This prevents the meats from dripping on one another and mixing the flavors since I had four different flavors of jerky to process.

This smoker fits about half a deer easily at one time. I am surprised how much meat fit into it.

I worked all day and into the night on the smoker.

But the results are so much worth it. The jerky is better than from the store because it is all natural with no artificial chemicals, ingredients or preservatives.
