DO NOT SKIP on the best meal of the day! We absolutely love and cherish breakfast around here, and it doesn't have to be a pain, you don't have to spend all morning in the kitchen. Just 2 minutes each morning and you can have a delicious breakfast prepped and ready, getting you started off on your best day. These quick & easy breakfast ideas are perfect for you!

Breakfast Burritos (we like to make double of this)
6 medium flour tortillas
2 Tbsp unsalted butter
6 large eggs
1/2 cup sour cream, divided (2 Tbsp for eggs & 1 Tbsp per tortilla)
1/4 tsp sea salt , (or to taste)
6 oz Sausage, ground
4 oz cheese,
1 Tbsp butter , to sautee

Breakfast Burrito Filling:
-In a medium bowl, whisk together 6 eggs with 2 Tbsp sour cream, and salt and pepper to taste.
-Heat a large skillet over medium heat and sautee sausage. Add additional topping ingredients. Remove from pan.
-In a pot or skillet over medium heat, melt 1 Tbsp of butter, add egg mixture and stir/scramble until the eggs are 75% cooked. While cooking, remove from the heat, and put back on the heat every minute or so. Also add in salt and 2 tbsp of sour cream. Stir constantly.
-Combine eggs with sausage.

Assemble:
-Spread 1 Tbsp sour cream in the center of a tortilla and top with 1/6 of the cooked eggs, shredded cheese, and toppings.
-Tightly roll the burrito and wrap each one in parchment paper. Place into a freezer safe bag and freeze.

To reheat:
-1 min in microwave.
-Add tbsp of butter to pan, and sautee burrito on all sides. Serve hot!

Bacon Lattice Quiche
-10 strips bacon
-20 ounces frozen hash browns thawed
-½ cup white cheddar shredded
-½ teaspoon salt
-¼ teaspoon pepper
-7-8 eggs beaten
½ cup heavy cream or whole milk
-1 cup white cheddar cheese shredded
-1 tbsp chives sliced or parsley
-salt and pepper to taste

-Create a lattice with bacon on parchment lined baking sheet. Cook on 425 for about 10-13 minutes.
-Combine potatoes, 1/2 cup cheese and s/p in a bowl.
-Lightly grease a pie dish and evenly press the hash browns mixture into the bottom and sides of the pan.
-Place the pie dish into the oven at 425 for 15 minutes.
-In a large mixing bowl whisk together eggs and cream. Cheese and Chives.
-Pour the egg mixture into the hashbrown base and place the bacon lattice on the top, just gently pushing into the egg mixture (it doesn't need to be submerged).
-Bake at 375 for 30-40 minutes until eggs are cooked.
