Linguini with Lemon Butter Sauce and Prosciutto

Minced Garlic 1Tbsp
Smoked Paprika 2 tsp
Chipotle ½ tsp
Shredded Asiago or Parmesan 3/4 cup
Chopped Parsley ½ cup
Olive oil as needed
White wine as needed to deglaze the pan
Butter 2 Tbsp
Lemon butter 2 Tbsp
Cooked linguini
Approximately 1 ounce Prosciutto toasted in the oven for 20 minutes at 325 F turned halfway through. Remember all ovens are different and the thickness of your prosciutto is also a factor.

This takes about 30 minutes to prepare. I started cooking the linguini about the time I deglazed the pan. Heat the skillet and add some olive oil. You don’t want to get it too hot. You mostly want to sweat the garlic when you add it, the chipotle and smoked paprika. Slowly brown them and then deglaze the pan with a white wine. This step is the longest part of this recipe. Add the cooked linguini into the skillet along with a few tablespoons of the water and stir it coating the linguini evenly. Add the cheese and stir hopefully getting an even distribution throughout. (Fail) I never worry about that. Now you add the lemon butter, parsley and toasted proscuttio. Then plate it up and chow down.
