Avocado and Egg Breakfast Bowl
1/2 avocado, mashed
2 large eggs, scrambled
1/4 cup shredded cheddar cheese
Salt and pepper, to taste
Instructions:
Preheat oven to 375°F.
Place the mashed avocado in a bowl and mix in salt and pepper.
Transfer the avocado mixture to an oven-safe bowl or ramekin.
Crack two eggs over the top of the avocado mixture.
Sprinkle shredded cheese on top.
Bake in the oven for 10-15 minutes or until the eggs are cooked to your liking.
Low-Carb Pancakes
1/4 cup coconut flour
1/4 teaspoon baking powder
1/4 teaspoon salt
2 large eggs
1/4 cup unsweetened almond milk
1/2 teaspoon vanilla extract
1 tablespoon butter or coconut oil, for cooking
Instructions:
In a mixing bowl, whisk together the coconut flour, baking powder, and salt.
Add the eggs, almond milk, and vanilla extract, and whisk until the batter is smooth.
Heat a non-stick skillet over medium heat and add the butter or coconut oil.
Using a 1/4 cup measure, scoop the batter onto the skillet.
Cook for 2-3 minutes on each side or until the pancakes are golden brown.
Serve with your favorite keto-friendly toppings, such as sugar-free syrup or fresh berries.
Breakfast Casserole
6 large eggs
1/4 cup heavy cream
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped spinach
1/4 cup chopped bell pepper
1/4 cup chopped onion
1/4 cup shredded cheddar cheese
4 slices cooked bacon, crumbled
Instructions:
Preheat oven to 375°F.
In a mixing bowl, whisk together the eggs, heavy cream, salt, and pepper.
Add the chopped spinach, bell pepper, and onion, and stir until well combined.
Pour the mixture into a greased 8x8-inch baking dish.
Sprinkle shredded cheese and crumbled bacon on top.
Bake in the oven for 20-25 minutes or until the eggs are set and the cheese is melted and bubbly.
Let the casserole cool for a few minutes before slicing and serving.
