INGREDIENTS:
2 cups basmati rice
1 1/2 lb chicken breast chopped into 1-2 inch pieces
2 tablespoons ghee or use butter
2 tablespoons canola oil or vegetable oil
1 large yellow onion diced
1 teaspoon ginger paste
1 teaspoon garlic paste
2 medium tomatoes chopped
2 green chilies chopped
1/3 cup fresh mint leaves
Salt to taste
1/4 cup coconut milk full-fat
2 1/2 cups water or chicken broth
2 tablespoons fresh cilantro chopped
Powder mix:
1/2 teaspoon turmeric powder
1 teaspoon red chili pepper powder
2 teaspoons coriander powder
1 teaspoon garam masala powder
Tadka/Tempering:
2 bay leaves
3 cloves
1 stick cinnamon
1 cardamom
1 star anise
2 teaspoons cumin seeds
