Melanie Cooking Tortang Talong ~ Stuffed Egg Plant

Melanie is cooking one of our last meals in the off grid tiny house on wheels. She is cooking Tortang Talong (stuffed eggplant) tonight for dinner with fish and rice.

We are mostly packed up and ready to leave. The only thing holding us up is this constant rain which made a swampy mess of our lane.

Right now we are using paper plates until the day we leave. In this way we are already packed and ready to go when the ground dries up.

Melanie is an awesome cook and always comes up with new things I have not yet tried. She says that when we get settled into a new home she will have to make this again fully on video.
