Basque Chicken with Peppers - Chef Terry

Saw this recipe the other day and I thought I would share this with you. Basque Chicken is a braised dish with loads of onions and peppers. Hope you enjoy.
Ingredients
1.5 lbs Chicken Thighs
1/2 lb Anduoille Sausage, or other spicy cured sausage.
1 tablespoon Thyme
2-3 Cloves of Garlic
1 medium Onion cut into thin sticks
4 Roma Tomatoes seeded and diced
2 Tablespoons Tomato Paste
1.5 cups Chicken Stock
5-6 ounces White Wine
1 cup Roasted Red Peppers, Piquillo are traditional.
2 tsp combination of Chipotle powder and Paprika. Piment d’Espelette is traditional. Ancho powder is a great substitute.
