Welcome to Feeding the Byrds!
You guys know I love easy recipes, easy dinners, easy cleanup.. these 3 new casseroles are all so delicious, you absolutely need to make these! Add them to your menu this week.

Stuffed Pepper Casserole (see below)

Stuffed Pepper Casserole
- 3 bell peppers chopped/diced to desired size
-1 TBSP evoo
-S/p
-1lb ground beef
-2 cups cooked rice
-1 can diced tomatoes (drained)
-1 tsp paprika
-1 tsp chili powder
-1/2 tsp onion powder
-1 tsp salt
-1 cup marinara or sauce
-1 cup cheese of choice

Preheat oven to 350.
Add peppers to an 8 inch baking dish and drizzle with EVOO and toss in salt and pepper.
Mix ground beef, rice, tomatoes, paprika, chili powder, salt and onion powder. Spread over the peppers.
Top with your favorite marinara sauce and some cheese.
Bake 30 min covered and then another 10 uncovered.
