Vegan Tofu and Eggplant Binagoongan | Filipino Vegan Binagoongan Recipe | Veganfood Video

Hey Foodies! Binagoongan is a classic Filipino dish made of pork meat stewed in aromatics and shrimp paste (bagoong). This vegan version is made if tofu and eggplant smothered in vegan bagoong sauce! Pair this with hot steamed rice and you’ve got yourself a nice hearty lunch.

Ingredients:
400g korean silken tofu (pressed, freezed and thawed for three cycles)
2 tbsp nutritional yeast
1/4 cup cornstarch
1 tsp garlic salt
1 tsp paprika
1 tbsp olive oil
1 tbsp soy sauce
1/4 cup oat milk
air fry at 180°C for 10-15 minutes, flip halfway
oil spray
5 cloves garlic
1 red onion
2 bell peppers
3 pcs tomatoes
2 medium eggplants
2 green chilies
2 tbsp cooking oil
3 tbsp vegan bagoong (vegan shirmp paste)
1/4 cup water
season with salt and pepper to taste.
