Chicken Fritters

Ingredients
• 1/2 lbs chicken breasts, (1 large)
• 1 large egg
• cheese, (1 1/3 cups shredded)
• 1/2 tsp salt , or to taste
• 1/8 tsp black pepper
• 2 tbsp extra light olive oil (or any high heat cooking oil)
Instructions
1. Using a sharp knife, dice boiled chicken into thick pieces and place them in a large mixing bowl.
2. Into the mixing bowl, add remaining batter ingredients: 1 egg, 1/3 cups shredded cheese, 1/2 tsp salt and
1/8 tsp black pepper. Stir the mixture until well combined.
3. Heat a large non-stick pan over medium heat and add 2 tbsp oil. When oil is hot, add the chicken mixture
a heaping tablespoon at a time. Slightly flatten out the tops with the back of your spoon and sauté
uncovered 3-4 min on the first side, then flip and saute 3 min on the second side or until outsides are
golden brown and chicken is fully cooked through repeat with remaining fritters adding more oil as
needed.

My favorite deep-fried snack food is chicken fritters. They are simple to make, and when they are golden on the outside and soft on the inside, they are the
best thing I have ever eaten. I like to accompany my fritters with a big side of
ketchup, but sometimes I enjoy them with a little extra something. Today I will be making a spicy sweet and sour sauce to pour over my chicken fritters,
which will bring my meal to a whole new level of deliciousness.
Chicken fritters are a traditional pub snack that have the simplicity of a pizza
without the heavy grease. They are best served with a side of salad, or a side
of fries. They are also a great way to use up leftover chicken. I usually make a large batch of these and freeze them for later.
