This is the recipe that really inspired me to start this channel. The video was from Dan Souza of ATK (link below) who called Koji a "game-changer". I want to explore koji and all that it can do to food. I haven't fried chicken before but I have eaten plenty. Stick around for part 2 to see if it turns out any good!
