Ingredients:
Apples: 1.5 kg
Dark brown sugar: 100 grams (more to taste)
White sugar: 100 grams (more to taste)
Cinnamon: 2 teaspoons
Ginger: Thumb size piece
Lemon: juice of half a lemon and zest of whole lemon
Salt: 1/2 teaspoon
