Ingredients:
Bell peppers
Protein of choice (e.g. ground beef, chicken, tofu)
Cheese
Avocado
Cilantro
Jalapeno
Sour cream
Lime seasoning
Instructions:
Hollow out bell peppers and toss them in boiling water with a lid on for about 5 minutes to soften.
Place peppers on a sheet pan and stuff with protein of choice.
Add cheese and bake at 425 degrees Fahrenheit for 10 minutes.
Top with a mixture of avocado, cilantro, jalapeno, sour cream, and lime seasoning.
