I decided to make a quiche for coffee here at home and the result surprised everyone.

This quiche recipe idea may even seem complicated, but try making it and you will see how easy it is.

Ingredients:

For dough:
• 200g wheat flour
• 150g cold butter, cubed
• 6 tablespoons cold water
• 1 teaspoon salt

Filling:
• 350g sliced leek
• 50g of butter
• 200g of ricotta
• Salt
• Black pepper

To the roof:
• 300ml of milk
• 4 eggs
• 50 g grated parmesan cheese
• Salt
• Back pepper
• Oregano

Method:

For dough:

In a bowl, mix the flour with the salt. Add the cubes of butter and knead, pinching with your fingertips until you form a crumbly dough. Add the cold water spoon by spoon, mixing with your hands until you can form a ball. Leave butter dots still visible to be very crispy after roasting.

Wrap the dough in cling film and refrigerate for at least 1 hour (if you prefer, prepare the dough the day before).

Preheat the oven to 200°C. Remove the dough from the refrigerator and place it on a floured surface. Open with a roll until you form a circle larger than the diameter of the shape. Place parchment paper over the dough filling the bottom with raw bean grains (to prevent the dough from inflating and cracking when baking). Take it to the oven for about 30 minutes to pre-bake.

For the filling:

Pique or slice the leek and sauté with the butter, that's all and set aside. Sprinkle the ricotta on top of the leeks, season with salt and black pepper and set aside.

To the roof:

In a small bowl crack the eggs. Add the milk and beat with a fluê until smooth. Season with salt and black pepper to taste and set aside.

After 30 minutes and the dough looks pre-baked, carefully remove it from the oven, also remove the beans (discard the beans), stuff it and reduce the temperature to 180ºC.

For assembly:

Fill the dough with the sautéed leeks, now the shredded ricotta (season) and on top go the beaten eggs. Return the pan to the oven to bake for about 40 minutes, or until the quiche is golden brown.
