Duck Guy's Pumpkin Pie Creamy Risotto with Raisins and Cashew Pesto!

This is a recipe that I love! Pumpkin pie risotto with Raisins, Pumpkin Cream, Cashew Pesto(with a few basil leaves) and Crispy Crust Pastry. Thanks for watching! Hope you love it ! Ask me in the comments if you need to know more about this recipe.

Recipe for 3 servings:
(1)Pumpkin Cream
-500gr Pumpkin in cubes( keep 100gr and fry them)
-Half Onion chopped
-300gr Milk Cream
-1 shot of cooking wine
-1teaspoon Salt - 1 teaspoon Sugar
-2 tablespoons of Parmesan cheese
-50gr butter for the Sauté
(1)Method
-Sauté the vegetables with the butter in low heat until they are seared
-Be careful with the butter it can burn easily
-1teaspoon salt-1teaspoon sugar
-One shot of wine and reduce in low heat
-After the alcohol evaporates add the cream and simmer until done
-Use a hand blender to make it creamy and add 2 tablespoons and lemon juice from 1/4 lemon.

(2)Cashew Pesto
-100gr Cashew Nuts
-5 Basil leaves(Optional)
-30ml Olive Oil
-A pinch of salt and black pepper
-1 clove of Garlic
-20ml water
(2)Method
-Blend Everything together until creamy
-You may need to add more liquid.
-You can add some avocado for extra flavor.

(3)Risotto
-Sauté half onion with olive oil
-Add the 1+1/2cups rice and continue to sauté to sear the rice (you can go for arborio or carnaroli rice)
-Add a shot of cooking wine
-After the alcohol evaporates use chicken of vegetable stock gradually to boil the rice.
-Always be careful when using store bought stock because sometimes they are too salty.
-While you make the rice Fry 100gr of the pumpkin cubes in 150 Celsius, then fry the crust pastry cut in triangles or any other shape you want.
-When the rice is almost ready remove from heat and add the Raisins, the Fried Pumpkin cubes( keep some one the side) 50gr butter, 4 tablespoons of parmesan, pumpkin cream and mix all together.
- Use a few fried Pumpkin cubes, raisins, fried crust pastry and the cashew pesto as toppings.
-If your pumpkin cream is thicker you may need to leave some more moisture in the risotto before you finish!
