How to make homemade Empanadas with Italian Sausage and Potatoes, served with Tomatillo Salsa, Pico de Gallo, Crema and dried Cheese.
Ingredients:
(makes 15 Sausage/Potato Empanadas)
Masa Dough:
2 cups Instant,
1-1/2 - 2 cups of Water (room temp),
1/2 tsp Salt,
Filling:
1 lb Hot Italian Sausage,
2 sm Potatoes (peeled/chopped),
1 tbsp Veg Oil,
1 Shallot (diced),
1 lg Roma Tomato (diced),
1/2 bundle Cilantro (chopped),
Salt to taste,
2 cups Vegetable Oil for frying
