In this video I make Cat's Tongue, also known as Pseudohydnum gelatinosum, into yummy jelly-like candies. Mushroom candy might not sound that great but it can be!! If you are into trying different things then you might wanna try this recipe.
ITs very simple and it starts with wild foraged mushrooms. These aren't your typical mushrooms though. The "Cats Tongue," is a type of saprobic mushroom that grows on dead conifer logs and branches here in the PNW and other places in the world. Its translucent look, strange jelly-like texture, and fuzzy little teeth on the underside make this one pretty hard to mistake when found in the wild. A bit of a winter loving mushroom, this on prefers the colder months, so at the time of this upload (January) the forests are dripping with these natural gummy candies. You could eat them straight off the log if you wish, as this is one of the few mushrooms that's ok to do with, (although eating a bunch of them raw could cause some stomach upset).
I make a super simple syrup with food dye, soak the mushrooms overnight, roll in sugar and dry. They're simply delicious.
Would it be easier to buy a bag of Swedish Fish at the store or some gummy worms? yes- undoubtedly- but it wouldn't be nearly as fun or as cool as doing this!
