Bunny Chow Recipe

Bunny chow is a traditional South African dish, originally from Durban, KwaZulu-Natal, which is a popular street food. The dish consists of a hollowed-out loaf of bread filled with a spicy curry, typically made with meat or beans.

Here is a recipe for a classic bunny chow:

Ingredients:

2 lbs of beef or lamb, cut into cubes
2 onions, finely chopped
4 cloves of garlic, minced
1 tablespoon of ginger paste
2 tablespoons of curry powder
1 teaspoon of ground cumin
1 teaspoon of ground coriander
2 cups of water
2 cups of canned diced tomatoes
1 cup of cooked red kidney beans
Salt and pepper, to taste
4 loaves of white bread, hollowed out to make a "bowl"
Instructions:

In a large pot or Dutch oven, brown the meat on all sides over medium-high heat.
Add the onions, garlic, ginger paste, curry powder, cumin, and coriander. Cook until the onions are softened, about 5 minutes.
Stir in the water, canned tomatoes, kidney beans, salt, and pepper. Bring to a boil, then reduce the heat and simmer until the meat is tender, about 1 hour.
To serve, hollow out the loaves of bread to make a "bowl" and fill with the curry.
Serve the bunny chow hot, with the bread bowl alongside for dipping.
Note: Bunny chow can be made vegetarian also with substituting meat with vegetables, or legumes like chickpeas, lentils, and black-eyed peas. You can add variety of vegetables like cauliflower, carrots, peas, and potatoes.
