How to make lentils actually taste good [lentil pumpkin soup recipe]

This lentil pumpkin soup is DELICIOUS and SO EASY to make! It’s inspired by Indian cooking, although I’ll be honest: I’m not too familiar with that many Indian dishes. I will say it comes together pretty quickly—it took me maybe 45 minutes from start to finish (and keep in mind, I still have yet to find my rhythm in the kitchen). I like to eat this for lunch on busy weekdays, but I think it’d make a nice dinner, too, if you throw in some already-cooked chicken (maybe even a Costco rotisserie bird to keep things nice and simple!). I also want to mention: the recipe says to use red lentils, but I’m sure it’ll come out perfectly fine with any other colored lentils you’ve got. Then again, I haven’t don’t that yet, so if you do, tell me what you think!
