Prices are continuing to make us all wince at the store. Let's do something about that. By reducing your food waste, you get more food for the same money...that's a good start, right?

How do you do that? Make stock from scraps.
Here's my basic recipe:

1-2 lbs of leftover poultry bones and trimmings
1ish pounds of vegetable scraps (skins, ends, trimmings. They need to be dirt free)
Water (depends on the size of your pot)
1-2 Tabledpoons thyme
1 Tablespoon rosemary
1 Tablespoon of peppercorns
a few bay leaves
salt to taste

optional: 1 Tablespoon of apple cider vinegar
1 teaspoon sage
1 Tablespoon stinging nettles

I use a 21 quart stockpot and after I add the ingredients, I fill the pot with water and put a lid on it.
Simmer the whole mess together for 12-24 hours. I know it's a long time, but it is worth it.

Then you can pressure can it if you want it to be shelf stable. If you have the freezer space, you can also freeze this just fine.

The pressure canner I have, and love so much, is an All-American model 921.
