This is a great way to use Vegetables for your Lunch or Dinner, make Duritos.
Ingredients:
(makes 8 Duritos),
1 sm Cabbage (sliced),
1 Cucumber (peeled n diced),
1 Jalapeno (diced),
1 red Onion (diced),
5 Radishes (sliced),
6 Sweet Peppers (sliced),
6 Roma Tomatoes (diced),
1 bundle cilantro (chopped),
Salt,
Pepper,
1 cup dried Cheese (crumbled),
8 Duritos,
4 cup Guacamole (or other option, Refried Beans)
