Peanut Chicken & Broccoli Over Coconut Rice

Ingredients:
1-1/2 cups Rice (washed n dried),
1 cup Coconut Milk,
2 cups Water,

2 Chicken Breast (chopped),
Salt/Pepper,
1/4 cup Water,
6 cups Broccoli (chopped),
1 cup Peanut Sauce (also on Rumble),
1 tbsp Coconut Oil,
1 tbsp Vegetable Oil,

Peanut Sauce Ingredients:

1 Jalapeno (chopped finely),
1 Shallot (chopped finely),
2 Garlic Clove (minced),
1 tsp Vegetable Oil,
1/2 cup Coconut Milk,
1/2 cup Peanut Butter,
1 tbsp Soy Sauce,
1 tbsp Brown Sugar,
1/2 tsp Sesame Oil
