Becker's Easy Eats Lunar New Year Specials: Easy Lion's Head Meatballs

One of the most festive and auspicious dish for the Lunar New Year's Eve dinner is the Lion's Head meatballs. They are basically large meatballs made of pork and slowly braised to perfection with Napa cabbage. The "draping" of the Napa cabbage leaves over the large golden brown meatballs resembles a lion's head, thus the name of the dish. The secret to making the meatballs delicate and tasty is in the constant mixing in one direction until the meat mixture becomes very sticky. Go ahead and watch my take on this favorite Chinese dish!

EASY LION'S HEAD MEATBALLS

Ingredients:
600g ground pork (about 20-30% fat)
600g napa cabbage
A knob of ginger (about 1-inch)
2 stalks of green onion
2 tbsp cornstarch
2 tbsp soy sauce
1-2 tsp salt
1 tsp white ground pepper
2 cups chicken stock
Green onions for garnish
