Flourless Banana Oatmeal Muffins: Easy Healthy Breakfast Muffins
Flourless banana oatmeal muffins are a great option for a healthy breakfast or snack. The recipe is made with simple ingredients and doesn't require any flour. Here's a basic recipe that you can use as a starting point:
Ingredients:
2 ripe bananas
2 eggs
1/2 cup of rolled oats
1/4 cup of honey or maple syrup
1 teaspoon of baking powder
1/2 teaspoon of cinnamon
1/4 teaspoon of nutmeg
1/4 teaspoon of salt
1/4 cup of chopped nuts or chocolate chips (optional)
Instructions:
Preheat the oven to 350°F (175°C) and grease a 12-cup muffin tin.
In a mixing bowl, mash the bananas with a fork or potato masher until smooth.
Whisk in the eggs, honey or maple syrup, baking powder, cinnamon, nutmeg, and salt. Stir until well combined.
Stir in the rolled oats, and if desired, add the chopped nuts or chocolate chips.
Using a spoon or ice cream scoop, divide the batter evenly among the muffin cups.
Bake the muffins for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Remove the muffins from the oven and let them cool for 5 minutes in the pan, then transfer them to a wire rack to cool completely.
These muffins are a great option for a grab-and-go breakfast and are perfect for busy mornings. you can make a big batch and keep them in the fridge for a few days, or you can even freeze them for a longer shelf life.
You can also add more ingredients to your muffins like raisins, shredded coconut, or mashed berries for more flavor.
Also, instead of sweetener you can use dates paste or any other natural sweeteners.
