Apricot Meatballs

Ingredients:

2 Bell Peppers (diced)
18 oz. Apricot Preserves
1/2 cup Hoisin Sauce
6 oz. Dried Apricots (chopped)
1/2 tsp. Crushed Red Pepper Flakes
1/2 cup Rice Wine Vinegar
2 lb. Meatballs

Instructions:

In a large pot, add bell peppers, preserves, apricots, red pepper, and vinegar and bring to a boil.
Stir in meatballs, cover, and simmer on medium for 15 minutes.
Serve over rice.
