Ingredients:
* 3 lbs. Boneless Skinless Chicken Thighs
* 4 cloves Minced Garlic
* 1 lb. Roasted Red Peppers (sliced)
* 2 tbsp. Italian Seasoning
* 2 tsp. Black Pepper
* 14.5 oz. Diced Tomatoes
* 28 oz. Crushed Tomatoes

Instructions:
1. Add all ingredients to slow cooker.
2. Cook on High for 3-4 hours, or Low for 6-8 hours. Server over penne pasta.
